Tepeztate Agave

This special blend of Ensamble Mezcal is made from 61% Tepeztate, part of the agave Marmorata family. The elusive Tepeztate can take as much as 25 years to mature in the wild and grows primarily on the sides of steep rocky cliffs. Because of its wild and rare nature, we must take care not to overharvest, as to ensure the future of this beautiful plant.

Tobalá Agave

Tobalá agave makes up 39% of the Ensamble blend and is part of the agave Potatorum family. Tobalá grows in the wild at high altitudes for 10-15 years, and because of its relatively small size, yields intensely aromatic but extremely limited quantities of mezcal. Tobalá is becoming increasingly rare. Unlike most other agave, Tobalá can grow from seed and Sombra has taken care to plant Tobalá agave each year.

Cooking:

Conical stone pit ovens, fueled by oak wood. Length: 4 days.

Milling Type:

Mechanical tahona, fueled by solar panels.

Fermentation:

Natural open air. The crushed agave pulp and fibers are placed in wooden vats and fermented with wild yeasts (no chemical accelerants) for 5 days average.

Distillation:

The fermented agave juice & fibers are distilled twice in copper pot stills. The 2 varieties of these agaves were cooked, milled, fermented and distilled separately and then blended in cold, to achieve this particular, unique and unrepeatable flavor profile.
